Sweet-Smelling Cucumber A perennial plant belonging to the fossil fragment family. It tends to grow in bushes. Young leaves have pointed tips and a tendency to curl. They grow in pairs. The leafstalks are concave in shape. The tender young shoots give off an enticing smell of cucumber, hence the name sweet-smelling cucumber. This product is rich in nutrients, containing many vitamins, proteins, carbohydrates, inorganic salts and fats. The young shoots can be eaten. Young shoots which have not yet curled up should be selected. After blanching in hot water, the shoots are placed in either brine or a preservative. Quality requirements: the plants should be fresh, normal in colour, with no ageing roots, impurities or strange smells, and be neither rotten nor damaged. The leaf should have a minimum diameter of 2.5cm when uncurled. The stems should be no more than 5cm in length
