textured soy protein “Opttema” – is a product of soy protein extrusion, with a porous structure that provides the ability to bind and hold considerable volumes of moisture. It imitates the texture of various food products – meat, fish, mushrooms, depending on aromatic and tasting components added. Can be used for partial replacement (from 15 to 40%) of meat mince, as well as a separate dish. Soy is rich in microelements: P, Ca, K, Mg, Fe, Mn, Cu. It also contains a significant amount of vitamins.
Soy texturate has high content of protein with rich amino-acid nutrition value. It is free of saturated fats and cholesterol , that helps reduce the risk of heart and blood vessel diseases.
It is used for improving the structure of meat and fish products in the production of rough milled meat products and half-finished products, such as: cutlet, meat dumplings, (oriental) dumplings, pancake with meat, tinned food with milled meat, meat-vegetable tinned food, boiled and smoked and half-smoked sausages. This product is rich of vitamin group B, magnesium, calcium, dietary fiber (cellulose). The rate of hydration: 1:3 Recommended application norm: 30-40% (in the hydrated form)or 15-30% depends on type.
