TRUFFLES
This precious subterreneous fungs grows in humid areas rich in particular salts and develops especially well in clay and calcareous terrains rich in silica. There are over one hundred different varieties of truffle but the best known are the White Truffle, from the Piedemont region of Italy, and the Black Truffle, from Norcia or Spoleto in Umbria, followed by the Bianchetto and Tartufo Nero Estivo.
