TECHNICAL DESCRIPTION OF THE APPARATUS AND THE PROCESS
STEAMING UNIT US-2 VK 1300 is the apparatus for cooking of jam, marmalade, ajvar (red pepper chutney) and other pulpy, nutritional, semi-manufactured products, by evaporation of water inside a vacuum.
Basic elements of the apparatus:
The required vacuum is achieved and maintained with the use of two-phase pump that has a rotating water ring.
The thickening of the medium (e.g. ajvar) is accomplished by the evaporation of water and the drainage of wet steam into the water cooled semi-barometric condensator. The wet steam from the upper housing of the vacuum cooker is drained via a butterfly block valve into the contra-flow semi-barometric condensator, where it directly mixes with the circulating cooling water. Centrifugal pump draws the cooling water and liquified wet steam from the bottom of semi-barometric condensator and forces the same into the cooling tower for cooling. Once cooled inside the tower,the cooling water flows back to the water intermediate tank with the use of gravity.
The screw pump, used for drawing out of the preserved medium can also be controlled locally with a push button, next to the pump at level 0,0. Switching on/off of all electromotor drives is carried out from the control-distributor cabinet, located on the orking platform at the level of 2,2 m.
