| Climate and Soil: | The vineyards are located between Rome and Florence, overlooking Umbria, at an altitude of about 450 metres. The characteristic hilly development of the calcareous, medium fertile soil and the favourable climate of this region, exalt the potential of this variety. |

| Vinification: | The grapes are harvested manually and placed into bins in order to be transported directly to the stalk remover. Must and peels are fermented at controlled temperature in stainless steel decanters. Once it has been pressed and decanted, the clear wine is transferred partially in tonneaux and partially in new French oak barrels. |
