DEFINITION

The Purple Corn is a variety of Zea mays, annual grass that grows between

1000 and 3000 meters. 

Its stem, solid and straight measures up to 4 m. Purple corn is a healthy legacy for humanity, because it contains phenolics and anthocyanins, phytochemicals and other important benefits because of its nutritional value, it has been part of Andean cuisine since pre-Inca time. The cob of the plant is used for preparing a popular drink called chichamorada, high in phenols. The dye is a characteristic that is the anthocyanin cyanidin-3-b-glucose, is found in the grains on the cob.

This natural dye is a potential health benefit, because it is a rich antioxidant with proven medicinal properties worldwide.

ORIGIN

Inter-Andean valleys, central coast and is characteristic of marginal soils. The main producing areas are: Lima, Ancash and Arequipa.

100% selected organic purple corn, free from artificial scents, flavors or colors.

 

COMPOSITION

Contains between 7.7 to 13% protein, 3.3% oil, 61.7% starch. It also contains, P, Fe, Vit. A, Thiamin, Riboflavin, Niacin, A. Ascorbic acid, and anthocyanins. The Purple Corn is rich in phenols and anthocyanins and other phytochemicals, anthocyanins [3-O-β-D-glucoside, pelargonidin 3-O-β-Dglucoside, peonidin 3-O-β-D-glucoside, cyanidin 3-O-β-D-(6-malonyl-glucoside), pelargonidin 3-O-β-D-(6-malonyl-glucoside), peonidin 3-O-β-D-(6-malonylglucoside) , cyanidin 3-glucoside, cyanidingalactoside, pelargonidinglucoside], phenols, tannins.
