The Apricot fruit a good source of fiber and potassium and also contains nourishing beta-carotene, which is beneficial to optical health. The carotenoid lycopene which is a potent antioxidant that has been shown to be beneficial in promoting cardiovascular health, is present in Apricots as well. The Apricot tree is a small tree that ranges from 8 to 12 meters in height and is part of the Rose family. The canopy of the tree is dense and outspread and bears leaves that are egg-shaped with a pointed tip. The flowers of the Apricot grow individually or in pairs, and are produced in the springtime before the leaves begin to bud. The blossoms have five petals and are 2-4 cm across with a white to pinkish hue. The fruit of the tree, the Apricot itself, is a drupe, which means the flesh of the fruit surrounds a pit or “stone,” which contains the seed. Apricot fruits are generally 1.5-2.5 cm in diameter and are soft yellow to deep orange in color, with velvety skin and a sweet, juicy flavor. Apricots are most commonly enjoyed as fresh fruit, but are often dried or preserved.
