In this picture you can see one of my olivegroove, here are approximatly 250 trees, they get no pollution of any kind, no pesticide and NO water , that increases the ployphenols in the olive because we "stress" the tree. By doing this procedure, we concentrate the oil, there is less quantity but therefore more quality! The acidity is around 0.3% and the level of polyphenols are doubled or even three times higher then the average oils. The taste is like fresh cut grass. It is cold pressed and not filtered.
