Azodicarbonamide (ADA) Food-Grade is a popular, potent and safe flour improver, an ideal substitute for potassium bromate.
Azodicarbonamide (ADA) Food-Grade functions as a dual oxidant ingredient in the maturation of Wheat Flour (flour improver). It not only bleaches the flour as an oxidant of carotene in fresh flour, but also improves flour strength by oxidizing cysteine. The increased strength enabled by this ingredient improves the gas retention of wheat flour dough and elasticity of bakery products.
Azodicarbonamide (ADA) Food-Grade's rapid oxidation reaction enables shorter storage periods for wheat flour and faster fermentation of wheat flour dough.
