Brussels Sprouts are powerhouses of nutrition, containing many important Vitamins and minerals such as Riboflavin, Iron, Magnesium and Phosphorus, as well as being a very good source of Dietary Fiber, Vitamin A, Vitamin C, Vitamin K, Thiamin, Vitamin B6, Folate, Potassium and Manganese. Brussels Sprouts are rich in sulfur containing nutrients and are a good source of omega-3 fatty acids. Importantly, Brussels Sprouts top the list of commonly eaten cruciferous vegetables for total glucosinolate content, specifically glucoraphanin, glucobrassicin, sinigrin, and gluconasturtiian. In addition, Brussels Sprouts have the indole-3-carbinol compound which may promote colon health. Brussels Sprouts also include the 3,3'-Diindolylmethane compound, which research shows may be helpful to the pancreas. Studies show Brussels Sprouts may promote bladder and cardiovascular health as well. *

The Brussels Sprout plant is comprised of a long, thick stalk that grows to about 24-47 inches in height when fully mature. The sprouts themselves, which are colored a beautiful bright green, grow like buds along the sides of the center stalk among large green leaves and resemble miniature cabbages. Those buds, commonly referred to as Brussels Sprouts, are usually about 1-2 inches in diameter when harvested. The Brussels Sprout is a very hardy plant and can withstand quite cold temperatures. It is even said that Brussels Sprouts are at their sweetest and best after a good frost.
