Production philosophy: “Cacro” is the result of a perfect synergy between the supreme international Grape cabernet sauvignon and Croatina, a grape typical and native of Verona.Is a unique wine. Sleek and structured, is both a young and versatile wine.
Provenance: From vineyards of Azienda Agricola, located in Parona di
Valpolicella at 250 meters above sea level, with tuffaceous and
calcareous soils.The pruning system of the vineyards is guyot, at 6000 strains per hectar.
Grapes: Cabernet Sauvignon 60 % Croatina 40 %
Processing and aging: The selection of the grapes and their full maturity are the production basis of this wine, made by the fermentation of fresh grapes.
During harvest, the grapes are placed in small 5-6 kg boxes, in order to
preserve their integrity and then are immediately gently pressed.
A brief cold maceration followed by a long fermentation at controlled
temperature allows the full expression of aromatic characters.
The result is a wine with an intense color, great aromas and structure.
Rest in French oak barrels for 12-14 months before being bottled.
Bottle aging 60 days.
Description: Ruby red tending to purple. Elegant and complex, at the nose slightly spicy with hints of red fruits like blackcurrant and blackberry.
On the palate tannins still intense but well balanced by the structure and the fruitness still very present.
Serving suggestions: Matches well with many dishes, such as Pasta with eat sauce or risotto. Ideal with red meats, game and aged cheeses.
