Production philosophy: “Monte La Parte”, is a modern wine made with the traditional production techniques combined with the most updated technology. It is an intense and elegant wine, created to meet the taste of most demanding palates.
Provenance: From vineyards of Azienda Agricola, located in Parona di
Valpolicella at 250 meters above sea level, with tuffaceous and
calcareous soils.
The pruning system of the vineyards is guyot, at 6000 strains per hectar.
Grape varieties: Corvina 40% Corvinone 30% Rondinella 30%
after a careful and rigorous selection in the vineyard are harvested
entirely by hand. A second selection identifies the best grapes that are placed in trays to rest and dry. The drying process, without any help of air conditioning, lasts longer than 90 days with a loss of weight/water up to 30%.
The grapes are than vinified in stainless steel with full control of all
phases. A cold maceration during approximately 15 days is followed by a slow fermentation that lasts for at least 30 days.
Replacements and delestage help to extract all the potential of the grapes.
The wine is aged in barrels of French oak for at least 24 months.
After this long aging the wine is refined back in steel for a few months before bottling. Bottle Aging lasts another 90-120 days.
Description: Ruby red with light orange reflections , the nose opens with
aromas of ripe cherry, Raspberry and mint with notes of spice that blends to the wood.
Meditation wine.
