Modern Research

Capsaicin, N-(4-hydroxy-3-methoxybenzyl)-8-methyl-trans-6-nonenamide, is extracted from hot red pepper. The capsaicinoids present in the fruit are mainly capsaicin and dihydrocapsaicin, making up 80-90%.

Capsaicin has been used as food additives and drugs for many years (Holzer P, 1994). And capsaicin is also used in pesticides (Pesticide Products, 2007).
