Located in the southern part of the region “Cotes de Castillon” the Chateau Pillebois borders the prestigious vineyards of Saint Emilion giving us a beautifully balanced and interesting wine.
The cuvée "Vieilles Vignes" is made from the oldest vines available on the estate with an average of 40 years old for the vines. Using a blend of 80% Merlot and 20% Cabernet franc from 12 hectares of vines, the chateau blends a well-rounded and fruity wine.
The soil is composed predominantly of Sand and grave which is very much the same as Saint Emilion soils.
Vinification: The wine is made in traditional cement and steel vats. Wine making takes 25 to 30 days depending on the year. The ageing is done in oak barrels for 12 months in 1/3 new barrels, 1/3 1 year old barrels and 1/3 in 2 year old barrels. After draining and malolactic fermentation, the wines are clarified by joining with Egg white in a traditional way. The bottling is made in the cellar of the Chateau with group bottling machines. Production of this Chateau is about 14000 bottles for “cuvee Vieilles Vignes”. Tasting notes: Very round and dark RED WINE with fruity notes that are characteristic of blackcurrant and red fruit. The attack is supple and elegant; the bouquet is intense with a tannin structure that is present and harmonious. A pleasant long aftertaste. On the good years this wine can be kept 8 to 10 years before drinking.
