Pairings : it matches well-structured first courses, barbecued meats, mature cheeses, eggs, game, red meats in general.
VINIFICATION : The grapes are destemmed and crushed; maceration on the
skins for 20 35 days; vacuum pressed;
AGEING: 24 months in French oak barrels;
