Fontina from the Aosta valley near Geneva, Switzerland is the only true fontina and not to be confused with the ersatz versions from Denmark or other countries. The farmhouse of Vallet Pietro produces the finest fontina of the valley. The rind is thin, ranging from reddish yellow to dark brown in color. The cheese is soft and fairly elastic with a pale-yellow color.
