High fructose corn syrup (HFCS) is processed by liquefaction ,saccharification, carbon purification, filtration, iron exchange and isomerisaton methods, based on starch as a raw material . It is usually colorless or pale yellow, while still transparent. HFCS is usually in the form of a viscous liquid (at room temperature) and also has a unique smell, sweetness and texture. According to fructose content, High Fructose Corn Syrup is divided into F42, F55, and F90 Segments. These days, F42 has been basically eliminated , with F55 as the most popular product, and F99 a close second. HFCS consists of fructose and glucose, with its main constituent being monosaccharide, while that of sucrose is disaccharide, being that there is not much difference in sweetness between the two. If we say the sweetness of sucrose is 0.95, then that of F42 ,F55 and F90 is 1.0,1.1 and 1.4 respectively.
Beverage Applications: HFCS has the characteristics of sweetness increasing with decreasing temp ,ie below 40 ℃ , the colder , the sweeter . It is suitable for refreshing drinks and cold beverages, such as carbonated drinks, juices, Alcohols and others related beverages. World famous Pepsi & Coca-Cola have been using F55 instead of Cane Sugar successfully for a number of years.
Food Applications: HFCS has good solubility, strong moisture preserving ability, and great osmotic pressure . For example , the high osmotic pressure can shorten the candied time for the preserved fruit production. Good solubility can inhibit the growth of yeast and mold. Strong moisture preserving ability can prolong shelf time.
