Jaggery traditional unrefined non-centrifugal whole cane sugar consumed in Asia, Africa, Latin America and the Caribbean. It is a concentrated product of cane juice.
Jaggery a particularly wholesome sugar, since it retains more mineral salts than refined sugar and it is made without chemical agents. Indian Ayurvedic medicine considers jaggery beneficial in treating throat and lung infections; jaggery is healthier than refined sugar, as it was not introduced into the blood as rapidly.
