Activity Definition: 

One unit (U) of lipase is defined as the quantity of enzyme, which liberates 1μmol titrable fatty acid per minute from substrate at 40ºC, pH7.5.

Chracteristics:

Temperature: 37-80 ºC     PH: 2.5-11.5

Color: yellowish white

2. Protease

Activity Definition:

one protease unit is defined as the amount of enzyme which hydrolyze 1 ug tyrosine per minute from casein at 40  ºC , ph 3.0.

Chracteristics:

Temperature:30-50  ºC,       PH: 2.5-6

Color: dark brown
