Maitake (Grifola frondosa) is the Japanese name for an edible fungi with a large fruiting body characterized by overlapping waves. Maitake is derived from the Japanese, "mai" meaning dance and "take" meaning mushroom, thus many refer to Maitake as the "dancing mushroom".
