Microwave heaters work by exciting individual polar molecules, causing them to vibrate, thus heating the product literally from the molecular level. Traditional microwave heaters generate unfocused microwaves that heat in isolated, non-uniform regions creating "hot-spots". These "hot-spots" cause non uniform heating resulting in considerable product degradation. Thus standard, unfocused microwaves are hot desirable for fluid processing. Industrial Microwave Systems, Inc. has patented a method to focus microwaves using an elliptical applicator though which product flows. The use of focused microwaves eliminates hot-spots and provide uniform heating of your product in less than 1 second. Because there are no hot surfaces in the microwave heater, your product cannot burn on. Additionally, your product is never in direct contact with steam as in steam injection or infusion. Thus flash cooling is not needed and the loss of volatiles is eliminated. This system is capable of HTST processing and UHT processing for selected products.
