Hard yellow cheese from organic sheep's milk and up to 10 % goat's milk from livestock farms in the areas of: Mantinia, Levidi, Asea (Arcadia), Aetos, Filiatra (Messinia) , Andritsena (Ilia), Geraki (Laconia).
Taste:
Pale yellow colour with a golden hue on the rind. Soft and smooth solid texture with a fine buttery aroma and a mild, almost sweet flavour, leaving a pleasant spicy aftertaste of long duration.
