STRAW WINE

The outstanding quality of straw wine is a result of very difficult process. It also requires a good deal of expertise on the vintner part, and a lot of manual labor. 

grown on previously selected vineyard tracts ans as they fully ripened, only the best  harvested and stored in special ventilated areas on a bed of straw. the Grapes are dried for a minimum of 3 months and have minimzm 40-50 degrees of their natural sugar content. 

Extraordinary care is required after the grapes have been laid down. This is probably the most difficult phase of production, requiring nearly constant attention. Then they are  pressed in their entirerty with gentle pressing taking 36 hours, which results from 10 to 15% of the original weight. The must thus acquired is highly concentrated, and resembles freshly harvested honey. During fermentation the Alcohol content reaches 11%, with a high degree of residual sugar up to 370 g to a liter. The straw wine is placed in barrels to mature.
