Xylanase. It is the enzymatic preparation for breaking up of the unstarched polysaccharides. The type of enzyme - endo-1,4-xylanase (EC 3.2.1.8). The use of xylanase in the production of alcohol and bioethanol allows effectively to process rye and wheat. It is applied in pulp and paper plants for the bleaching of cellulose. Xylanase does not directly affect the lignin, however, its use lightens the process of cellulose bleaching.
