L’ Autin, which means “little vineyard” in piedmont dialect, founded in 2010, doesn’t have the ambition to recognize itself in the classic wine tradition, but it takes its cue from it and adapts it to the territory.
The values in which Autin recognizes itself are the passion and determination in making quality wines in a foothill area,
characterized by pedo-climatic conditions apparently hostile to the cultivation of the vine.
Our challenge is to cultivate with pride international and autochthonous white grape varieties that express themselves in the glass with surprising results in terms of perfumes and minerality; at the same time, we grow Piedmontese and autochthonous red berry which express the organoleptic characteristics of the territory.
The Autin’s dare was the Classic Method "Eli Brut" (60% Pinot Noir - 40% Chardonnay and a little% of autochthonous wine) and "Eli Brut Rosè" (100% Pint noir).
In 2015, for the first time, we sent 3000 bottles of “would-be fizz” down the mine to undergo the critical stage in their
production, the secondary fermentation, deep underground, located in the foothills of the Italian Alps, some 50 kilometers (30 miles) southwest of Turin, the Val Germanasca mine produced talc, the material used to make talcum powder, up until the mid-1990s.
Each bottle is put into the mine by hand and in the deep they rest for minimum 36 months, with constant temperature of 10 degrees (Celsius, 50 degrees Fahrenheit) all year round and in dark and humid area, so talc's mine present perfect conditions for making bubbles!
The process involves adding yeasts and sugar to a still white wine to trigger the reaction that creates the crucial bubbles, in line with a method pioneered in Champagne and used for most of the world's prestigious sparklers.
Weedkillers and chemical fertilizers are not used in the vineyards and integrated pest control reduces the use of antiparasitic treatments. From 2020, L’ Autin is classified organic wine company, this means that we use the organic farming method.
Italian White Wine Classic Method - Eli Brut L' Autin - Giuseppe Verdi Selection
We have selected the Eli Brut of L'Autin winery a greenish yellow Sparkling White Wine Classi Method, obtained from Pinot Noir , Chardonnay and a little% of autochthonous wine (Blan Ver). They have an annual limited production from Piemonte region due too their high quality.
Must ferments in stainless steel tanks for about 15 days at controlled temperatures between 15 and 17°C. The wine receives extended file lees contact in tank for 2 months. During the spring, when the temperature are naturally raising up we do the tirage, the wine is bottled with sugar and yeast to induce the second fermentation according to the classic method processing . in this second fermentation there is an increasing of the alcohol amount and most important there is a production of carbon dioxide who produce the bubbles.
After that the bottles stay horizontally for 30 months to smooth the bubbles and to get the yeast flavours.
This ageing is done deep in the mountain, in an ex talcum mine in valle Germanasca where there is no light and the permanent temperature of 10#C all year round, perfect conditions to fine thew wine.
After 30 months we manually do the rémuage that is carrying the lees on the top of the bottle, follow the dégorgement whitout addinn any liqueur d'espedition.
Harvest: beginner of September.
