Erythritol is a polyol and is naturally present in some fruits and fermented food. Erythritol is a natural sweetener with 

approximately 70% of the sweetener power of sucrose. It has an attractive cooling effect and can mask unwanted aftertastes.

 Erythritol has non-hygroscopic properties and good thermal and chemical stability. It is non-toxic with a caloric value of 0.2 kcal/g.
