Brief introduction:
Green tea is the second-most consumed beverage in the world only after water, and has been used medicinally for centuries in China. Green tea is prepared through the process of picking, lightly steaming and drying.
According to modern research, the main active constituents in green tea are found to be catechins, which possess potent antioxidant activity. Epicatechin (EC), epigallocatechin (EGC), epicatechin gallate (ECG) and epigallocatechin gallate (EGCG) are present in significant quantities. And EGCG makes up about 10-50% of the total catechin content, and has an antioxidant activity much more powerful than vitamin C and E(Frei & Higdon. 2003).
