IBERIAN HAM
The Iberian ham and shoulder ham come from Iberian pig. The main features
that distinguish their quality, derived from the purity of the breed of animal
breeding in extensive regime of freedom of the Iberian pig in wooded pastures
where they can move, feed and cure the ham. Iberian ham is distinguished from
the rest by its texture, aroma and unique FLAVOR and distinct taste but varies with
the degree of acorn that has eaten the pig and its range of motion.
HAM:
Part obtained from the hind limbs of the Iberian pig, is characterized by its
streamlined shape, fineness cane, black hoof and its marbling infiltrated tissues. Its
color is red with pinkish hues and its flavor is intense, long and full of unique
flavors.
SHOULDER HAM:
Part obtained from the forelimbs of the Iberian pig, is characterized by its
streamlined shape, fineness cane, with black hoof and soft fat and shiny. It taste is
exquisite and delicate on the palate and highlights his long aroma.
The characteristics of hams and shoulder hams of D.O "Guijuelo" are:
