Konjac gum is a hydrophilic polysaccharide extracted from konjac root. Its major ingredient is glucommanan(KGM), a mainly straight-chiain polymer composing of glucose and mannose. Konjac gum is enriched of soluble dietary fibers, 16 amino acids and trace elements, while low in fat,protein and calories. It is a kind of thickener, stabilizier, gelling agent and emulsifier.
