We can produce Gardenia yellow, a kind of food additive. This is a kind of natural edible colorant.
It is easily soluble in water and homeopathic alcohol. The water solution of the pigment has a bright and golden-yellowish hue. It is not soluble in oil. Ph degrees have almost no influence to crocin's color value. It's steadier than beta-carotene in either ph4-11. Especially, crocin will be bright yellow when in alkali situation. The revivification-resistance, microbe-resistance are excellent. The pigment has a good dyeing ability to starch and protein. Metal ions have no influence on it but Fe.
It can be used for drinks, noodle, candy, wine, dairy product, cosmetics, medicines and Chinese Herbs.
The pigment is derived from the fruit of Gardenia jasminodes by high technique.
