GROWING:

Olive Co. chooses High Density, Low-Vigor Olive Grove technology which encompasses five pillars of successful olive growing:-

  • Site selection:demographics, soil structure and composition, rainfall etc)
  • Grove design (aspect, irrigation, run off, tree layout)
  • Purpose built machinery (straddle harvesters, sprayers & pruners)
  • Superior plant selections resulting in low vigor, self fertile olive trees that do not display biannual bearing tendencies. The most commonly planted and successful variety for commercial scale high density olive oil production is Signore.
  • Quality plantations are geographically spread throughout Australia giving rise to minimal impact of any one natural event (frost, hail, flood, fire etc.) ie. minimal disruption in supplying customers.

Storage is considered a most important step (no less than Harvesting, Growing and Processing) in the delivery of a high quality product. Each of the varietal blends are stored in temperature controlled, food-grade stainless steel tanks ranging in various sizes from 10,000 litres to 50,000 litres in volume. They are blanketed with Nitrogen gas to ensure the oil does not become oxidised.
Of paramount importance is the protection of the Extra Virgin Olive Oil from heat, ultra-violet light and the aforementioned oxygen. Stainless steel is the industrys material of choice in the protection against these elements. Again this is vital to delivering a quality product: Olive Co. - Extra Virgin Olive Oil.
