Description
Pomell is the Catalan word for a mixed bunch of winter flowers. As this wine is blended from a number of different
varieties, we decided to create a linguistic parallel.
Each of the different wines forming the coupage are fermented and aged with their mother yeast in underground tanks in the style of the great white Wines of Loire and Chablis.
Once finished, it begins to gather its own personality, determined by the vintage and each characteristic of its components.

Winemaking Process Immediate extraction after destemming. Alcoholic fermentation in stainless steel tanks for 10 days at 14oC. Stabilization and light clarification. Slightly filtered before being bottled.
Ageing Aged in contact with the mother yeast in underground tanks for 6 months in the style of the great white wines of Loire and Chablis.The yeast, which is basically inactive, confers the wine with complimentary rich structures of aromas and taste. This style of ageing leads to an enriching of new amino acids, particularly in mannoproteins, derived from the breakdown of the remaining yeast, conferring the wine with an abundance of tertiary aromas.

Serving Suggestions
We suggest it as an aperitif wine, with fish and shellfish prepared in different ways. Thanks to its moderate acidity, complexity and textures, this wine is ideal with uncooked shellfish (oysters) as well as with seafood prepared in the oven, grilled or fried. We also recommend it with starters of smoked and marinated fish, and fresh goats’ cheese. Serve temperature: 8o-10oC
