Terroir:
We are sourcing our grapes from the north region where the conditions are extremely favourable for cultivating grape varieties. The relief is hilly, 160-180 m above the sea level, with brown soils and carbonate humus. They are warm, well ventilated and slightly granulated. The average temperature during the period of vegetation is about 36 - 37 C, which along with the long and warm autumn provide the best conditions for sugar accumulation in the presence of high total acidity and pH 3.0-3.2. The average annual rainfall is about 530-540 litres a square meter, and it determines sufficient humidity.
Tasting notes:
An exquisite blend of 100% barrel fermented and aged Chardonnay wines. Golden in colour, with an impressive nose of citrus fruit and apricot notes lined with Vanilla and caramel notes. In the mouth it is well balanced and medium bodied.
Winemaking:
The quality of grapes is subject to special care and attention while still in the vineyard. Harvesting takes place in September, when the Chardonnay grapes reach optimum ripeness. Depending on the aromatic potential of grapes and their quality, as well as on our idea about the style of wine we are seeking to create, the product undergoes maceration aiming to extract aromatic compounds from the grape skins. During this process our wine-makers strictly monitor the extraction of tannins in order to decide exactly when to remove the juice from the seeds and skins. Then the product is fed to a pneumatic press, where the grapes are treated as delicately as possible. Fermentation takes place in 225 l American, Bulgarian and French oak barrels. The wine matures for 6-9 months in the barrels before bottling. This Chardonnay is made to be consumed within 3 years after the vintage date.
